This position is in Cargill’s protein and salt business, where we provide wholesome, high-quality food products to a wide range of customers, from foodservice operators and grocery stores to manufacturers and exporters.
Job Purpose and Impact
The Merchant III (Tallow Merchant) will manage a supplier base and execute transactions to deliver commodities that meet production requirements in terms of timing, volume, quantity, and cost. This role demands comprehensive business acumen with a focus on trading, understanding the beef industry, and generating revenue. You will merchandise and position beef tallow from our cattle processing plants, cook plants, and others to various industries, including pet food, renewable diesel/biodiesel, and cattle feeders.
Key Accountabilities
- Benchmark against reported market by positioning and trading against profit and loss.
- Collaborate with transportation and logistics, quality assurance, customer managers, and credit managers to ensure efficient execution.
- Ensure plants are adequately supplied by coordinating truck or tank car availability for load-outs.
- Work directly with rendering plant teams to understand shipping plans and product specifications.
- Research and analyze freight opportunities in the marketplace to maximize margins.
- Develop business solutions by working directly with customers, suppliers, and business counterparts.
- Handle complex issues independently with minimal supervision, escalating only the most complex issues to appropriate staff.
- Demonstrate excellent multi-tasking abilities and prioritize business needs effectively.
- Develop strategies and go-to-market solutions, generating ideas for efficiencies.
- Exhibit strong self-motivation and communication skills to engage with multiple stakeholders.
- Travel as needed, including plant visits, customer visits, and conferences.
- Perform other duties as assigned.

Qualifications
Minimum Qualifications
- Bachelor’s degree in a related field or equivalent experience
- Minimum of four years of commodity or grain trading background or related sales/trading work experience
- Understanding of market structures and S&D landscapes
Preferred Qualifications
- Understanding of futures/options markets
- Knowledge of logistics and arbitrage
- Knowledge of international trade
- Knowledge of feed rations
- Knowledge of biofuel tax margin structures
